Recipe and randomness

For once, my child has not been the source of an outbreak. Most of the children at the sitters' (including her own) have come down with RSV-like symptoms. I wasn't really familiar with this until now but it seems the severity can range from a mild cold to forcing a child to be hospitalized for breathing treatments. So we are keeping Peanut from the sitters' for a couple days and calling in the pinch hitters of my mom and my mother-in-law. Both of selflessly agreed to come watch our little Peanut. I've been sending up prayers of thanks for sparing Peanut of the illness as well as healing for the other munchkins.

I took the afternoon off yesterday to spend with Peanut and we headed to the grocery store. While I was in line with my child, who was dressed head-to-toe in purple and playing with pink toys, an older gentleman came up and began a debate with himself about whether she was a girl or boy and declared to anyone who would listen that she was a boy. Apparently the purple and pink threw him off. I understand small children with not much hair tend to look pretty gender neutral but seriously, pick up a hint. I kindly explained to him that she was actually a girl.

And about this time, I realized I had grabbed the wrong wallet and had no way to pay for all the groceries on the conveyor belt. Awesome. Thankfully the clerks were very nice, ringing up my order and putting it aside while I ran home to get the correct wallet.

So that was my fun for the day. I did, however, find a great new recipe on a can of shredded chicken I picked up at Sam's Club. I made it last night so we could eat it tonight. It gained the husband's approval. The best part - it was cheap and easy. I made a crock pot full that will last us a few meals for less than $12.

So enjoy. Here is the recipe:

1 13 oz. can of shredded chicken (I used two. I like chicken)
1 15 oz. can of corn
1 15 oz. can of kidney beans
1 15 oz. can of black beans
1 15 oz can of tomatoes and chiles
1 can of chiles
1 28 oz can of diced tomatoes
1 pack of taco spices
1 pack of ranch dressing mix

Drain the chicken, throw everything in the crock pot. Let cook. Add cheese and sour cream. Enjoy.

Peanut is such a cutie -- even with the sparse hair I can't imagine anyone thinking she's a boy. And the recipe sounds yummy!

Thanks ladies! I probably should have mentioned that it is called chicken taco soup. It made enough for three lunches for me and a dinner for three people. If you like things a little spicier, I would suggest adding another can of chiles. I will be doing that the next time.

(Hello! I just stumbled across your blog.)

Sadly, my eight month old was the RSV poster child in his daycare room last week. And while I'm conviced that he caught it from a little slobbery girl in his room, I'm not hating. I just keep telling myself they'll all be healthy as horses once they hit kindergarten.

Also, am so going to try that recipe. Sounds marvelous.

And your daughter is ridiculously cute. And pretty! Seriously.
